Don't Bungee Jump Naked!

Here's a clip from Jeanne Robertson, a classy southern lady who shares good clean fun! If you've heard her before, you know she refers to her husband as "Left Brain." This town of Nanaimo in Canada is known for more than just their naked bungee jumping. Here's my Mom's (Nelda) recipe for the yummy Nanaimo Bars. They claim that these bars have no calories during Bathtub Racing Week or Christmas Season! They are good. We've always used the instant vanilla pudding, but you can purchase the custard in Canada. Maybe you can pick some up while you are there for the Winter Olympics in Vancouver!

Nanaimo Bars

3/4 c. margarine
1/2 c. granulated sugar
1/2 c. cocoa
1 t. vanilla
1 egg
2 c. graham cracker crumbs
1 c. coconut
1/2 c. nuts

Melt the 1/2 c. margaring in a saucepan and add remaining ingredients above.
Press in the bottom of a 9" pan.

Cream the following ingredients:
1/4 c. margarine
2 T. instant vanillla pudding mix
3 T. milk
2 c. powdered sugar

Spread on top of 1st layer and chill.

Melt 3 squares semi-sweet chocolate with 1 T. butter. Spread over first two layers and chill. Cut into bars with a warm, dry knife. (dip the knife in a glass of hot water, and wipe dry before cutting)
